G’day mate!
I was in Australia in December, it was my first time over there and I was amazed by all the great food and fresh produce they had. Was on a road trip so we stopped at a lot of gas stations and road side cafés and everywhere they had pies. Felt like I had at least one a day. So when I stared in to my fridge yesterday and saw puff pastry, chicken, veggies and cream, I thought it was time for me to try to make my own kind of Aussie Pie..
For about 3-4 pies you need:
150 grams chicken, chopped
1 onion, cut into wedges
1 cup of mixed veggies (I used broccolini and peas)
½ a cup of cream
1 tbsp. of flour
1 sheet of puff pastry
1 egg, beaten
¼ cup grated cheese
- Set the over to 175-200°
- Fry the chicken until it’s almost cooked trough.
- Add the chopped up veggies to the pan, and fry for an extra 2 minutes.
- Sprinkle the flour over the fried stuff and season with salt and pepper.
- Pour over the cream and add the cheese and let simmer for about 3 more minutes, till it thickens.
- Roll out the puff pastry and make rounds in the size as your pie forms, two for each pie.
- Place 3-4 pies rounds, depending of the size of your pie forms, into the forms and fill with the filling.
- Cover with the extra round and gentle squeeze the end together, so the filling stays in the pies.
- Brush the pies with the egg.
- Place the pies in the oven and let cook for about 15 minutes, till the pies looks golden and puffy.
- Eat!
