G’day mate!

I was in Australia in December, it was my first time over there and I was amazed by all the great food and fresh produce they had. Was on a road trip so we stopped at a lot of gas stations and road side cafés and everywhere they had pies. Felt like I had at least one a day. So when I stared in to my fridge yesterday and saw puff pastry, chicken, veggies and cream, I thought it was time for me to try to make my own kind of  Aussie Pie..

For about 3-4 pies you need:

150 grams chicken, chopped

1 onion, cut into wedges

1 cup of mixed veggies (I used broccolini and peas)

½ a cup of cream

1 tbsp. of flour

1 sheet of puff pastry

1 egg, beaten

¼ cup grated cheese

 

  1. Set the over to 175-200°
  2. Fry the chicken until it’s almost cooked trough.
  3. Add the chopped up veggies to the pan, and fry for an extra 2 minutes.
  4. Sprinkle the flour over the fried stuff and season with salt and pepper.
  5. Pour over the cream and add the cheese and let simmer for about 3 more minutes, till it thickens.
  6. Roll out the puff pastry and make rounds in the size as your pie forms, two for each pie.
  7. Place 3-4 pies rounds, depending of the size of your pie forms, into the forms and fill with the filling.
  8. Cover with the extra round and gentle squeeze the end together, so the filling stays in the pies.
  9. Brush the pies with the egg.
  10. Place the pies in the oven and let cook for about 15 minutes, till the pies looks golden and puffy.
  11. Eat!
