Say cheese!

I love cheese and especially a fine (preferably french) non-pasteurized  creamy brie. But this is a great way to serve a not that fancy and pasteurized brie. It only takes about 15 minutes and works great as a an after dinner snack with a nice glass of red.

And it’s my super cool friend Caroline’s 30th today. So I dedicate this “cheese cake” to you Carro. Grattis på födelsedagen!

What you’ll need

1 Brie

a handful of dried apricots

A handful of roasted almonds

A handful of dried cranberries

About 1 tbsp. honey

2 sprigs rosemary

And this is how you make it;

  1. Heat the oven to about 175°.
  2. Chop the almonds, cranberries and almonds.
  3. Place the cheese in the oven and cook for about 8-10 minutes.
  4. Finely chop the rosemary and mix with the honey. If the honey is a bit to “dry” you can heat it with a little bit of water to loosen it.
  5. When the cheese is baked, remove it from the oven. Arrange the dried fruit on top of it and drizzle the honey over.
  6. Serve with a nice baguette or some biscuits.
