Simple Salade Niçoise

My vacation is over and I’m back in Sweden again. But before we can call it fall and get ready for comforting food, such as soups and stews. I have a couple of recipes that I made in France, prepared for you. The first one is my version of a real Riviera classic, Salade Nicoise!

 

For the recipe ..

Simple Salade Nicoise

-for 4 hungry guests

2 cans of Tuna in olive oil

1 head Iceberg lettuce, chopped

150g green beans

3 shallots, finely sliced

4 tomatoes, cut into wedges

4 hard boiled eggs, peeled and cut in 4

1/3 cup black olives

4-6 potatoes

 

½ tbsp Dijon mustard

½ tbsp white vinegar (or wine vinegar)

1/3 cup Olive oil

Salt and pepper

  1. Boil the potatoes in salted water for about 15 minutes or until cooked through. Drain and let cool, cut into quarters.
  2. Cook the beans in boiling water for about 3 minutes, then drain and refresh with cool water.
  3. Make the vinaigrette by either shaking all the ingredients in a jar. Or stir mustard with the vinegar in a bowl and then whisk in in the oil so that an emulsion forms. Season to taste with salt and freshly ground pepper.
  4. Arrange the salad on a large platter with the lettuce in the bottom and then top with rest of the ingredients.
  5. Drizzle the dressing over the salad just before serving and mix well.
