Lentil soup
I love soups and especially this time of the year. This lentil soup is really easy to make and healthy too, not bad.
I’ve been sick the last couple of days, but with this soup and the new Sons of Anarchy episodes it’s hasn’t been that bad. Jax, I’ll cook you dinner any day of the week..
Lentil soup
1 cup Lentils
1 onion, chopped
3 cm ginger, grated
½ chili, sliced
250 cherry tomatoes, divided in two
1 litre vegetable stock
2 carrots, julienned
1 zucchini, julienned
50g coriander, chopped
Salt and pepper
Olive oil
- Add some olive oil to a pot and gently fry the onion, tomato, ginger and chili for 3-4 minutes on medium heat.
- Add the vegetable stock and bring to the boil, then add the lentils and let simmer for about 5 minutes.
- Add carrot and zucchini, let simmer for an additional 1-2 minutes.
- Season with salt and pepper. Sprinkle with chopped coriander.
- Serve.

I’ve never been a fan of lentils cos they always look so dull and boring. But somehow your photos of the soup are so pretty it makes me keen to try this recipe!!
