Mushroom and mozzarella salad
I love mozzarella and think it’s the perfect lunch food. For a while I think I made Caprese salad for lunch at least 3 times a week. Which led to a slight overdose of mozzarella, but yesterday I got feeling again and made this mushroom mozzarella salad. Mushrooms and cheese is a great combo and this dish works great as a lunch or a nice little starter.
M & M salad
-for 1 person as a lunch or for 2 persons as a starter
1 mozzarella
1-2 handful mushrooms of any kind, I used oyster mushrooms
3 spring onions, cut int0 5 cm bits, and the green ends finely sliced
1 handful of rocket
A couple of basil leaves
1 nob butter for frying
Olive oil and balsamic vinegar
- Start by frying the mushrooms and onion on medium heat in butter, until they are golden. Turn the heat down and sprinkle with balsamic vinegar.
- Tear the mozzarella into bite size bits. (Pleeeeaaaase don’t cut it)
- Arrange the mushrooms and onions, mozzarella, rocket and the green finely sliced onion on a serving plate or a bowl.Top with basil, drizzle over some olive oil and season with coarse salt and freshly ground pepper. (Don’t tell me you use fine salt and ready ground pepper)
- EAT.
