Penne alla norma
Happy new year! I moved to a new apartment over the holidays, it’s such a great place. Love it already! But I haven’t had the time to cook as much as I’ve want lately. I am super psyched to start using my new kitchen though.
Anyways, here’s a great weeknight pasta recipe!
Penne alla Norma

500g penne
1 eggplant, cut into 2x2cm chunks
1 onion, chopped
3-4 garlic cloves, minced or grated
4 tomatoes, chopped
3 tbsp tomato paste
1 cup ricotta or as much as you’d like
Fresh basil
Olive oil
- Cook the pasta according to the instructions on the package.
- Heat up some oil in a skillet and fry the eggplant on high heat for about 3 minutes. Set aside until later.
- Fry the onion and garlic in some oil in the skillet, add the fresh tomato and the tomato paste. Season with salt and pepper and fry on low to medium heat for about 5-8 minutes. If the sauce is getting to dry just add some of the pasta water. Return the eggplant and add basil when the sauce is almost done.
- Drain the pasta and toss with the sauce.
- Serve immediately, topped with a spoonful ricotta on each plate and some more basil.
Serves about 4
